Rhubarb Bread

Here's my Mom's recipe for the Rhubarb Bread.  The sugar and cinnamon topping puts this one over the top!



1 1/2 cups brown sugar
2/3 cup oil
1 egg
1 cup sour milk
1 tsp. soda
1 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
2 1/2 cups flour
2 cups chopped rhubarb

Mix everything together.  Pour into a foil lined bread pan.  Sprinkle the top with a mixture of 1/2 cup sugar and 1 tsp. cinnamon.  Drizzle 1 tbs. melted butter over the top.

Bake at 350 degrees for 60-70 minutes (until a toothpick inserted comes out clean).  Makes one loaf, easily doubles.

Thanks for posting your recipe sounds yummy. I'll need to go and get some rhubarb now. I did try to grow some but with no success - maybe I should try again. I LOVE rhubarb. I made apple crumble last night which was nice!!

Jill my mouth is literally watering....my sister in law introduced me to rhubarb/strawberry pie many years ago. She makes me one at least twice a year.

Jill, I've already copied your bread recipe onto a recipe card and put it safely in my recipe box for the next time I have rhubarb. I've made rhubarb custard pie and fruit crisp but didn't have a bread recipe. I always prefer to get a good tried and true recipe from someone I know instead of a random recipe from a book. Whever I make Amish Frienship bread, I always always do the brown sugar and cinnamon topping. That is sometimes the best part of the whole bread!
